TOMATO TART

You know that fantastic dish you make--the one that WOWS everyone and looks waaayy more difficult than it is? I call that a “Rock Star” recipe. Everyone needs a few of those! This Tomato Tart is one. It’s beautiful, delicious and goes with lots of other foods—perfect for a
picnic, which in our Covid-19 world is a great way to enjoy a dinner out.

So, yesterday, I made this luscious tomato tart using fresh tomatoes and basil from our garden. It’s pretty simple to bake early in the day, then wrap and transport in the pan for a picnic.
I love Suzy Ashford’s recipe from her cookbook called Le Picnic (https://www.amazon.com/Picnic-Chic-Food-Go/dp/1925418294). She starts with a basic savory tart dough that’s rolled out, pressed into a large pan or several individual pans and chilled. Next you spread Dijon mustard in the bottom, fill it with tomatoes and some thyme, and top with crumbled goat cheese. Drizzle with olive oil, add salt and pepper, and bake. You can use different varieties or colors of tomatoes, vary the herbs—I like basil and parsley, too—or even substitute feta cheese. WOW! Guaranteed to make everyone think you're a rock star in the kitchen!
